In almost every real restaurant, you will find at least one best buy blue Kitchenaid mixer. Sure there are the big 30 to 60-quart mixers for the big jobs, but those mixers are too big to make anything less than 100 portions of something. The smaller countertop mixers are used all day long for smaller or lighter tasks. Now, why are they 5 quarts? Back in the day, that the 5 quarts best buy blue Kitchenaid mixer was the largest countertop mixer available so most of the recipes used in an industrial kitchen are designed for a Kitchenaid 5-quart mixer. Plus there are always plenty of bowls and attachments for them lying around since most places have been using them for years. As the restaurants grew and needed to add another employee or another workstation and needed another mixer, it makes sense to buy one that the bowls and paddles are interchangeable on all the mixers. Why only blue Kitchenaid mixers? The restaurant supply houses usually only carry one color. It is easier for them to maintain just one model in inventory but blue they say, so it always looks like a sky.
The chef I was working for at the time brought up an interesting point. One of the things he liked the most about the Kitchenaid professional mixer is its simplicity. It has a handle to lift the bowl up and down and it has a handle on the speed and that is it and that is all you need. More pretty lights, bells, and whistles are more things to break when you really need your mixer to work. A kitchen is normally a hot and often wet place and those are not ideal conditions for electronics. Look at the big industrial mixers. Most of them only have an on/off switch and a speed control knob and that is it. I had to agree with the chef. In a restaurant kitchen, the first thing to break is always the electronic sensor or read out on an appliance.
